A scorching day in the sun spent filming with DJ BBQ and Hersha Patel for Wild Dish. The two are doing a take over of Wild Dish’s Youtube channel over summer, so we hung out on a rooftop and BBQ’d a whole bunch of tasty and healthy dishes. These aren’t so much specific recipes, as just emphasising the beauty of using one pan for your cooking and ideas for sitting around the campfire. • Make chillies and tomato based dishes that can simmer away over a flame while you chop wood, then eat with simple pulses. Rice, quinoa, bulgar wheat, cous cous, etc. Make these vegetable based so you don’t have to worry about meaty contamination and they keep overnight. These ‘Chocolate Brownie Bowls’ by Nigella Lawson are perfection. They’re stunning, simple, but most importably they were demolished by my family within seconds of touching the table. The beauty of their unique toppings allows you to experiment with flavours and create little bowls of colourful explosions.
