If you were a child of the 90′s, peanut butter has to be one of the highlights of your youth. Opening up your lunchbox to find ‘Sunpat’ between two, soft pieces of white bread was the pinnacle of a school day. However, as we’ve grown up and matured, so has peanut butter. No longer are the only options ‘smooth’ or ‘crunchy’, but there’s a whole range of nuts in various forms to choose from. In the last few years, nut butters have had a huge resurgence. In a post-Christmas world where every meal has been some variation of turkey and pigs in blankets, I’ve decided to break out of the left-over wasteland and make some food which is as far away from a roast dinner as I can manage. Not a Yorkshire pudding in sight. I’ve done some recipes for a few different dips. These are two of the easiest, cheesiest Christmas canapés you’ll ever make. Ideal for Christmas parties, watching Elf in front of the fire, or if you just fancy eating a bunch of cheeses for dinner. There’s minimal washing up, it’s super quick and ridiculously simple to make. There’s room to experiment with both recipes too; Adding chopped walnuts on top of the camembert, using spicy mango chutney in the parcels, dipping crisps/veg in the cheese. Ho ho ho! For this first festive recipe, I’ve chosen a pudding I make each year. Firstly, it looks impressive. Secondly, you can eat the bowl. It’s Eton Mess with a festive twist. I’ve chosen strawberries, pomegranates and passion fruit, but you can use whichever fruit you have access to in fridge. It’s not too expensive and when the ingredients are all so tasty, it’s difficult to mess it up. Enjoy and don’t freak out if any of it goes wrong, abuse the word ‘mess’ in the title.
